Tex-Mex Chicken in Foil Packets

A grill-able version of our chicken breasts wrapped in foil sheets. Delicious hand trimmed antibiotic & hormone-free chicken breasts are topped with a light sprinkling of our house-made fiesta seasoning then nestled on a bed of black beans and corn. Top with mild salsa and Mexican cheese (both provided) for the last 2 minutes and your delicious Southwest chicken dinner is done. These can also be baked in the oven. • Hands-On Time: none- just pop on the grill or in the oven. 
  Cook Time: Grill: 20-25 minutes.  Oven: 30-35 minutes from thawed, 40-45 from frozen.

• Can be cooked from frozen or thawed (recommended) for oven directions. Must thaw for grill directions. Preheat oven to 375F.

  Oven: If thawed, place the closed foil pack on a baking sheet, make sure the chicken side is facing up and beans, corn and salsa are underneath. For frozen, place the closed foil pack on a baking sheet. Bake in oven for 30-35 mins if thawed (40-45 if frozen) or until cooked through and 165F. Carefully open foil sheets and sprinkle each breast with 2 Tbsp of the cheese mixture, return to oven for 2-3 minutes to melt cheese.

  Grill: Chicken must be thawed for grilling. Place closed foil packets, chicken side up (beans, corn and salsa underneath) directly on grill (set to medium high heat). Grill 20-25 minutes or until internal temp of 165F. Carefully open up each foil sheet and sprinkle each breast with 2 Tbsp of the cheese. Close grill for 2-3 minutes to melt the cheese.
